Vegan Baked Apples with Oatmeal

Ingredients

  • 5 apples
  • 1 cup rolled oats
  • ¼ cup walnuts
  • ¼ cup raisins or dried cranberries
  • 1 teaspoon cinnamon
  • Pinch of cloves
  • ¼ cup margarine melted
  • ¼ cup maple syrup
  • ¾ cup water

Instructions

  • Preheat your oven to 375 °F (180 °C) and get a baking dish.
  • Combine rolled oats, walnuts, dried fruit, cloves, and cinnamon in a medium-sized bowl. Stir in the melted butter and half of the maple syrup. Mix until well combined, then set aside.
  • Remove the stem and core of the apples, using an apple corer or knife. Leave the bottom intact and reserve the tops.
  • Place the apples upright into your baking dish without them touching each other. Using a spoon, divide the filling between the apples. Top with the remaining maple syrup, then put the apple tops back on.
  • Pour the water into the base of the baking dish and place the apples into the oven for 45 minutes. They are done when a small knife inserted through the side and base meets only mild resistance!
  • Be sure to let the apples cool a 5-10 minutes before serving them.
