Ingredients
5apples
1cuprolled oats
¼cupwalnuts
¼cupraisins or dried cranberries
1teaspooncinnamon
Pinchof cloves
¼cupmargarinemelted
¼cupmaple syrup
¾cupwater
Instructions
Preheat your oven to 375 °F (180 °C) and get a baking dish.
Combine rolled oats, walnuts, dried fruit, cloves, and cinnamon in a medium-sized bowl. Stir in the melted butter and half of the maple syrup. Mix until well combined, then set aside.
Remove the stem and core of the apples, using an apple corer or knife. Leave the bottom intact and reserve the tops.
Place the apples upright into your baking dish without them touching each other. Using a spoon, divide the filling between the apples. Top with the remaining maple syrup, then put the apple tops back on.
Pour the water into the base of the baking dish and place the apples into the oven for 45 minutes. They are done when a small knife inserted through the side and base meets only mild resistance!
Be sure to let the apples cool a 5-10 minutes before serving them.
Notes
Delicious toppings include vegan yogurt or vanilla ice cream.
